Ingredients:
12 medium potatoes
5 garlic cloves
1 onion
5 large tomatoes
eggs
salt and pepper to taste
parsley and basil
Sauté chopped onion and minced garlic until softened with a pinch of salt and pepper, add diced tomatoes and a bit of chopped fresh parsley, season with a bit less then a tsp of salt, cook for about 15 to 20 minutes, add fresh chopped basil. Fry the potatoes in a standard french style cut, sprinkle with a pinch of salt and involve them into the sauce, serve with fried egg and bread.
