Ingredients: 3 leeks (white only) 2 medium onions2 garlic clovesabout 200 g of shoestring potatoessalt and pepper to taste 5 eggsparsley and olives
Sauté onion and garlic until softened, sweat the leek until cooked, season with salt and pepper, add the potatoes and combine the beaten eggs with a pinch of salt, serve with chopped parsley and olives.
