Ingredients:
3 leeks (white only)
2 medium onions
2 garlic cloves
about 200 g of shoestring potatoes
salt and pepper to taste
5 eggs
parsley and olives
Sauté onion and garlic until softened, sweat the leek until cooked, season with salt and pepper, add the potatoes and combine the beaten eggs with a pinch of salt, serve with chopped parsley and olives.
