Cupcakes with marshmallow icing and chocolate shaves.
Ingredients:
-Icing:
200gr regular sugar
100ml water
2 egg whites.
-Cupcakes: (yoghurt cake)
1 yoghurt (used coconut flavor)
3 measures (yogurt cup) sugar
3 measures flour
1 measure oil
1 teaspoon baking powder
4 eggs
Bring the sugar and water to the heat, stirring a little until the sugar is dissolved. When it starts to boil, beat the egg whites into a soft peak and when the syrup reaches the temperature slowly pour it into the egg whites with the mixer turned on in a high speed. Beat for about 6/7 minutes or until the meringue it's cooled.
Preheat the oven to 180ºC, beat the yolks with the yoghurt and add the sugar, mix well to dissolve the sugar, add the oil and then the flour gradually, add the yeast and gently incorporate egg whites. Bake for about 30/40 minutes. Allow to cool before icing.
