Ingredients:
2 and ½ cup black eyed beans
coriander
salt and pepper to taste
4/5 tbsp olive oil
lemon juice (about ¼ lemon)
pinch of cumin
pinch of paprika
1 can tuna
1 small red onion.
Use a kitchen processor to mix beans with the tuna, coriander, onion and season with the other ingredients, add oil, salt and pepper to taste.
