Ingredients:
1kg octopus
6 potatoes
½ green bell pepper
½ red bell pepper
3 garlic cloves
3 red onion
20cl white wine
10cl olive oil
1 bay leaf
3 tomatoes
2 tbsp tomato pulp coriander
1 chilli pepper
Cook octopus in the pressure cooker for 30 minutes covered with water and 1 whole onion, cut the octopus, add a generous drizzle of olive oil to cover bottom of the pan, add one layer sliced onion, potatoes, garlic, octupus, coriander, salt and pepper, make as many layers as you can, drizzle a little bit more olive oli, white wine and water, cook over medium low heat with lid on for 20 minutes plus 15 minutes in higher heat uncovered, to serve add a few more chopped coriander.
